Warm Vegetable Salad! 🌿

I really enjoy adding fresh herbs to my meals, making them the star of the show. They hold so many health benefits and are right in our backyard or even on the window ledge, so easy to grow!

No excuse really, just old habits to break..we are so used to the convenience of dried store brought herbs that we loose the magic in the fresh ones.

So great to add in anything! 🙏

For the salad..
– Potatoes
– Carrot
– Cauliflower
– Zucchini
– Olive Oil
– Italian Herbs
– Garlic Salt
– Onion Powder
– Pepper

– Fresh Basil
– Fresh Parsely
– Olive Oil
– Dijonnaise Mustard
– Lemon (a lot)
– Salt
* Mix well and then pour over the vegetables after they roast in the oven for about 45 minutes, turning them over ever 15 – 20 minutes.

I topped this with some crushed walnuts for texture and because they are good for our brains! 🧠
